Our very own Paul recently judged the highly anticipated very first Black Pudding competition.
From the breakfast plate to the gourmet dining table, the IWFS North competition was designed to introduce catering students to the culinary potential and flexibility of the humble black pudding.
Competitors were tasked with producing a starter or main course that perfectly infused and celebrated black pudding, a challenge they overcame in style. The competition celebrated the creative and technical skills of students from 6 catering colleges across the North, who had been competing since early April to create a dish showcasing black pudding. The winners of the regional heats were judged by Paul and a panel of top chefs at the end of May, with results being announced and prizes presented at an Awards Lunch on 28th June at the Chancellors Building & Social Learning Hall at the University of Bolton.
The star of the show was the key ingredient: black pudding, which was kindly donated by competition sponsors, The Bury Black Pudding Company.
